June '20 - Asain Wok Snow Peas
Ingredients:
about 8oz snow peas (cleaned, ends trimmed, & cut in half)
2 tsp of a neutral flavor high smoke point oil (like peanut, avocado, sunflower, etc)
a sprinkle of white sesame seeds
fresh chopped leeks or green onions for garnish
Ingredients for Sauce:
1 tbsp Tamari (this is a gluten-free soy sauce alternative) OR you can use a normal low sodium soy sauce
1 tbsp Mirin or Shaoxing wine
1 tbsp Oyster Sauce
1 tsp Sesame Oil
1 tsp Sugar
2-3 cloves garlic (minced)
2 tsp fresh ginger (grated or minced)
Method:
Bring a pot of water to boil and while waiting on that to happen mix all the sauce ingredients together in a bowl and set aside.
Once the water is boiling give the cleaned and cut snow peas a quick 1 min blanch in there then remove/drain thoroughly.
Now heat a non-stick wok over very high heat. Once its heated then add your high smoke point oil to the wok and swirl around to cover the bottom and a bit up the sides as well. Once the oil is hot add the blanched snow peas and stir fry for a min or so.
Now you can add the sauce you made to the wok and continue to stir fry until that thickens a bit, and the veggies are coated.
Remove from heat and spoon into a serving dish then top with a garnish of sesame seeds & fresh chopped leeks or green onion.
