July '20 - Broccoli Crunch Salad
Ingredients:
4 cups broccoli (chopped into small florets)
1 cup salted sunflower seeds
1/2 cup raisins (chopped)
*you can also sub dried cherries or cranberries, or use any combination of dried fruits of your choice*
1/2-3/4 of a medium red onion (diced)
1/2 cup of cooked bacon (roughly chopped)
Dressing:
1 cup mayo
1 tbsp red wine vinegar
1/4 cup sugar
Method:
Chop or dice each ingredient as instructed above and mix in a medium bowl
In a separate bowl mix the ingredients for the dressing and adjust to taste perhaps you want some S&P, less sugar, more vinegar. Experiment!
Then just pour the dressing over your broccoli mixture and give it a good toss to mix well.
I prefer to chill the salad for a while before serving to allow all the flavors to meld together.
