July '20 - Broccoli Crunch Salad

Ingredients:

  • 4 cups broccoli (chopped into small florets)

  • 1 cup salted sunflower seeds

  • 1/2 cup raisins (chopped)

    *you can also sub dried cherries or cranberries, or use any combination of dried fruits of your choice*

  • 1/2-3/4 of a medium red onion (diced)

  • 1/2 cup of cooked bacon (roughly chopped)

Dressing:

  • 1 cup mayo

  • 1 tbsp red wine vinegar

  • 1/4 cup sugar

Method:

  • Chop or dice each ingredient as instructed above and mix in a medium bowl

  • In a separate bowl mix the ingredients for the dressing and adjust to taste perhaps you want some S&P, less sugar, more vinegar. Experiment!

  • Then just pour the dressing over your broccoli mixture and give it a good toss to mix well.

  • I prefer to chill the salad for a while before serving to allow all the flavors to meld together.
