September - Leftover Couscous w/ Summer Veg

Ingredients:

  • Leftovers from the “pearl couscous w/ summer veg” recipe

  • 1 cup of bone broth or stock

  • 1-2 cups of any protein of your choice

Method:

  • As I mentioned when I first made the couscous dish the portion size was too large for us to finish in one night. To enjoy it again a couple of nights later, I heated some bone broth over medium-high heat and brought it to a light simmer. Then I added my leftovers (minus any grilled halloumi if you had some of that left. To enjoy that again I suggest cooking it separately in the same way you did when first making the dish).

  • Add to the pan any leftover (pre-cooked) protein you also want to eat up. I had some turkey carnitas that I got from Sprouts.

  • Similarly if you don’t have any leftover protein you can of course use fresh, just be sure its cooked through before adding to this pan.

  • Cover the pan and leave it to simmer until everything is heated through.

  • You can chop up a bit more fresh basil to sprinkle over top if you’d like, but otherwise its as simple as that.
