January '24 Crispy Cauliflower Bites

 

Ingredients: (serves 2 people)

  • 1/2 head of cauliflower cut into bite-size pieces

  • 5-6 TBS of your favorite sauce or dressing (I used a ginger-lime peanut sauce)

  • 1/2 cup of panko breadcrumbs

  • 1/4 cup of flour

  • salt and pepper

Method:

  • Preheat your oven to 425

  • Place the cleaned bite-size pieces of cauliflower in a large bowl. Season with salt and pepper. Add your sauce or dressing. Stir to coat.

  • Place the breadcrumbs and flour in a separate large bowl. Season that with 1/4 tsp of salt and a pinch of black pepper. Stir to combine.

  • Add the saucy cauliflower to the breadcrumb mixture and toss thoroughly to coat.

  • Lift the breaded cauliflower pieces out of the bowl (leaving any remaining breadcrumb mixture behind). Arrange in a single layer on a lightly oiled, foil-lined baking sheet. Be sure to leave space between the pieces so they bake evenly and crisp nicely.

  • Roast these for about 23-25 minutes until nicely browned and crispy.

**I served over some fluffy jasmine rice, roasted edamame, drizzled with a spicy aioli, and topped with a bit of crushed peanuts
