November '23 - Creamy Maple Mustard Dressing
Ingredients:
1-2 cloves of fresh minced garlic
2 TBSP tahini
2 -3 TBSP dijon mustard
2 tsp maple syrup (prefer pure)
2 tsp apple cider vinegar
1 TBSP white miso paste
1/8 tsp cayenne pepper
1/8 tsp smoked paprika
1/8 tsp (each) salt & ground black pepper
1/4-1/2 cup water
juice from 1/2 lemon
head of fresh kale
1 TBSP extra virgin olive oil
Method:
Begin by cleaning your kale, removing the tough center stems, and then tearing them into small bite-size pieces.
Squeeze the juice of the 1/2 lemon over the prepared kale and also drizzle 1 TBSP of EVOO over it, lightly salt and pepper. Now massage the kale for a few mins with your hands until the leaves tenderize. Then set aside while you make your dressing.
For the dressing mix all other ingredients noted above in either a high-powered upright blender or food processor to make sure its super creamy and smooth.
The final step is to pour it over your waiting kale.

Salad Ideas:
1 (as photo above) I just sprinkled with a bit of sharp parm cheese, spiced peanuts, and fresh sliced and salted radishes from the farm.
2 try a version with roasted delicata squash rings, crisp apple slices, and candied pecans
3 top the dressed kale with crispy quinoa, dried cranberries, and a sauteed protein (chicken, tofu, chickpeas, etc)
